best fish to use: Sea bass, red mullet, mackerel, trout, plaice.
Step 1: preheat the oven to 400°F.
Step 2: place 1 medium whole fish on a board and, using a sharp knife, make about 4 scores in the skin, then remove any fins with scissors.
Step 3: Rub a little oil on the fish, season outside and inside the stomach and put on a baking tray.
Step 4: Bake the fish in the preheated oven for 20-25 minutes, or until the skin is crispy and the flesh feels firm to touch.
Step 5: serve the whole fish with lemon wedges and a drizzle of oil.
Tip: If you overcook the fish it will become too dry.
